Cock-a-Leekie Soup Simmering Away

This recipe is a delicious, feel good soup which is guaranteed to warm the cockles of you and your families heart. Whether you’ve been Christmas shopping or making snowmen this weekend, this soup is just what the doctor ordered. Not only is this recipe delicious, it also is completely slimmingworld friendly so long as you don’t eat it with the suggested warm, white crusty roll, laden with best butter YUM YUM !!!

Cock-a-Leekie Soup

INGREDIENTS

(SERVES 4 PLUS SOME LEFT OVER FOR FREEZING)

4 Chicken leg portions ( skinned if you what to keep it slimmingworld friendly)

4 large carrots roughly chopped

2 sticks of celery roughly chopped

2 small turnips roughly chopped

1 large leek roughly chopped

1 bay leaf

4 chicken stock cubes

Salt and pepper to taste

Left over chicken gravy (optional)

Boiling water to cover

Method

  1. Put the chicken, celery, leek, stock and gravy (optional) into a large pan and bring to the boil
  2. Simmer and cook for approximately two hours or until the chicken has almost fallen off the bone.
  3. Allow the chicken to cool slightly,  strip the legs and then chop into small pieces.
  4. Add the meat back into the soup, remove the bay leaf then season to taste with salt and pepper
  5. Serve with warm, crusty rolls smothered in best butter
